Food Safety at Summer Picnics

Schools are out, vacations are planned, picnics are being scheduled. The fun days of the warm summer months, delicious ice cream for dinner, and get-togethers with your friends and family are here! Whether you are heading to a friend’s picnic, or you are hosting one yourself, being cautious of food safety is important. Be Cautious of Temperature for Cold and Hot Foods
For foods that should be kept cold, such as fruit, potato salad, and pasta salad, be sure you have a system set in place where they can be on ice. Whether you put ice in a larger bowl or get a low plastic container for them to sit in, it is important to keep these foods cool. By doing this, it will help them last longer and avoid the danger zone where bacteria can grow.

Foods that should be kept warm are easier to manage as you can just throw them in a crockpot. But keep an eye on them! Depending on what temperature you keep it at the food could get too hot where it starts burning, or worse, someone gets burned when adding it to their plate or taking a bite!

When In Doubt, Throw It Out!

If you do a walkthrough of the food table and notice some foods aren’t looking good, throw them out! It is not worth the risk for the possibility of someone getting food poisoning. Perishable foods should not be left out for more than four hours.

On Hot Days Keep Food Indoors
For an all-day picnic it is smart, no matter what, to keep the food indoors. However, for those HOT summer days, always make it a priority to keep the food indoors.

Now that you’re ready with food safety tips, what should you bring to the party? Below is a tasty recipe, sure to be a crowd pleaser!

Best Ever Potato Salad

Ingredients
5 lb red potatoes
6 hard-boiled eggs
2 c. Miracle Whip
3/4 c. whipping cream
2 Tbsp yellow mustard
1/4 c. sugar
1/4 tsp salt
1/8 tsp pepper
1/4 c. white vinegar

Instructions
1. Peel and dice potatoes. Place in large stock pot and cover with water. Bring to rapid boil, turn down to medium heat and boil 5-7 minutes or until potatoes are tender. Drain potatoes and let cool.
2. In a medium mixing bowl whisk whipping cream for 1 minute. Stir in Miracle Whip, mustard, sugar, salt, pepper and vinegar. Mix until combined.
3. Pour mixture over cooled potatoes. Peel and dice three hard-boiled eggs and add to potatoes. Mix until combined.
4. Peel last three hard-boiled eggs and slice and place on top of salad.
5. Refrigerate until thoroughly cooled.
